Healthy Protein Salad


PERFECT PROTEIN SALAD WITH
BUTTERMILK DRESSING

SERVES 1

Ingredients 

2 cups baby spring mix
2 scallions, chopped
1 small cucumber, halved and sliced
4 white button mushrooms, halved and sliced
1/4 medium avocado, peeled and chopped
1/2 cup 2% cottage cheese
2 hard-boiled egg, peeled and chopped
3 tablespoons low-fat buttermilk
 Juice of 1 lemon
1.clove garlic, minced
Salt and ground black pepper, to taste

Method 

1. Into a medium bowl, add spring mix, scallions, cucumber,
mushrooms, avocado, cottage cheese, and egg.
2. In a small bowl, add buttermilk, lemon juice, garlic, salt,
and pepper. Use a fork to combine.
3. Drizzle the dressing over the salad, toss, and serve.
