Smoked Salmon Gimbap

Salmon known as one of the 'super foods"is rich in omega 3 and other vitamins and minerals.Because it is soft and good for digestion,salmon can be enjoyed even by children and the aged.smoked salmon gimbap with radish sprouts and cucumber is a dish that highlights salmon's fresh taste and flavor along with fresh green vegetables.

Yields: serves 2

Ingredients

  • 2 bowls rice, mixed vinegar(2 tbs of vinegar,1tbs of sugar,2 tbs of salt0
  • 3 nos seaweed leaves
  • little cooking oil
  • pinch of salt
  • for the filling ingredients
  • 2 slices crab flavored fish sticle
  • 1/2 no cucumber
  • 1/2 pack radish sprouts
  • 1 no egg roll
  • topping ingredients
  • 10 slices smoked salmon
  • little minced chives
  • little minced capers
  • horse radish mayonnaise sauce (mix all and keep in a fridge)
  • 4 tbs mayonnaise
  • 1 tbs horse radish
  • 1 tbs lemon juice
  • 1 tbs soy sauce
  • little sugar ,salt and black pepper

how to cook

  1. Properly cook the rice and mix it with vinegar evenly.
  2. After blanching the crab-flavored fish sticle,mnce it in to small pieces.cut the cucumber in to thin strips (10 cm each)and trim the radish sprouts.
  3. Beat the egg and make a thin omelet,and then cut the omelet in to thin pieces.
  4. Remove the oil from the salmon with a paper towel.
  5. Mix the above ingredients to make a horse radish sauce,pour it in to a sauce bottle and keep it refrigerated.
  6. To make Gimbap ,put the seaweed on to a first layer and spread the steamed rice on about 3/4 of the laver bed.then add the filling and the smoked salmon.
  7. Cut the Gimbap and garnish it with a small amounts of horseradish,mayonnaise sauce ,minced chives and minced caper.serve with soy sauce .

Cooking tip

With salmon leftovers ,it is good to make salmon salad,with onions ,carrots,chives.you can also cook salmon fried rice ,however salmon can be spoiled in hot weather.spring,Autumn and winter are good seasons for a salmon lunch box.
