Shawarma

Shawarma is a middle eastern street food that is very delicious.traditionally tender lamb is marinated in a special blend of spices and roasted on a vertical grill.as its cooks ,thin slices of succulent meat ball only to be pickup and laid to rest in a waiting warm pitta on a bed of lettuce and tomatoes.a drizzle of special tahini sauce is the finale touch before rolling it up and taking that first delicious bite.i make my home version of this unforgettable sandwich in either lamb or chicken .you won't want to go out for shawarma anymore.

Ingredients for lamb shawarma

  • 1 no Fresh Leg of lamb, De-boned and butterflied
  • 1 tsp each of cinnamon,paprika,cardamom,cumin,cayenne pepper,ground coriander,allspice,ground cloves,nutmeg
  • 1/2 tsp Mastic ground
  • 1 tsp Salt
  • 1 no Orange, zest and juice
  • 1 no Lemon, zest and juice
  • 1 cup Fresh coriander, chopped
  • 1/4 cup Olive oil
  • little Salt and Pepper
  • plenty of pitta loaves
  • tahini sauce
  • 1 cup fresh mint and parsley
  • 2 nos Tomatoes, sliced
  • 12 nos gherkins

Preparations

  1. Mix all of the dry and wet ingredients to make a marinade in a large glass bowl.
  2. Place the butterflied leg of lamb in the marinade and rub it all over.
  3. Cover with plastic wrap and leave in the fridge overnight to soak up all the flavors.
  4. Take out the meat and allow to come to room temperature.
  5. Fire up the barbeque.
  6. Place the prepared meat on the grill for a total 45 minutes,turning it halfway,and you like it medium rare.
  7. Leave it to cook longer if you like it more well done.
  8. I prefer the meat tender and pink in the middle.
  9. When ready ,remove the shawarma and cover loosely with foil and allow to rest for 15 minutes before slicing.
  10. To assemble the lamb shawarma sandwich,sliced the rested meat into thin slices and filled a pitta bread with the meat,drizzle over some tahini sauce ,place a few leaves of fresh mint and parsley and some tomato slices,and roll it up .
  11. Even a couple of gherkins are yummy with it .


Chicken Shawarma

chicken shawarma also very Delicious short dinner snack,but this recipe you can use for the anytime and specially I suggest this for the dinner

 

Ingredients

6 nos chicken breast
6 cloves garlic ,mashed
juice of 2 lemons
Zest of 1 lemon
1/4 cup olive oil
3 bay leaves broken
1 tsp each of paprika,ground cinnamon,nutmeg and all spice.
2 nos cinnamon sticks
1/2 tsp cumin and cloves
1/2 tsp mastic ground with 1/2 tsp salt
plenty of pitta loaves
1 cup fresh mint and parsley
2 tomatoes sliced
pickles ,if desired

Preparations

  • Combine all of the ingredients in a large glass bowl to make a marinade.
  • Place the chicken breasts in the bowl and rub the marinade all over.
  • Cover and leave in the fridge overnight.
  • when ready to grill ,heat the barbeque and place the chicken to cook on medium heat until done.
  • Remove and cover with foil to allow the meat to rest for 5 minutes.
  • Slice in to thin strips.
  • To assemble the chicken shawarma sandwich ,spread some toum on a small pitta bread.
  • place a few slices of chicken and herbs like mint and parsley and roll it up.
  • A slice of tomato and pickles on the side completes the meal.
  • this meal is great served with various dips.vegetables,spicy potato wedges,and plain yoghurt flavored with little fresh chopped mint.
