I can spend the day making desserts My grandma picked up on that when i was young.so she made me the official chef in my family.I started baking is an easy bake oven and i quickly learned the right to use the real oven.My attempt not always a success ,but with my grand mother's encouragement there was always a next time and I delighted in the challenge.i haven't locked back since.
Arabs adore sweets but in reality only serve them on special occasions.Fresh fruits usually end a big meal.Pastries and cookies can be served with tea or coffee any time of the day.The chocolate filled cardamom cookies are ideal.
I love Arabic sweets.rose flower scented syrup is commonly drizzled over a variety of buttery pastries.like baklawa or nammoura.the filling can be nuts,dates or luxurious fresh cream.One of my favorite is knafe nabulsieh, a crisp shredded pastry filled with cheese.glistering with sweet syrup.A delectable ending to any dinner.



Baked baklava cheese cake

All the flavors and textures in the famous baklava are in this cheese cake.You will love every exotic mouthful of this classic dessert with an Arabian taste.

Cook time :1 hour and 45 minutes
ready in: 2 hours and 15 minutes
Yield serve 10-12

Ingredients

Crust
1/2 cup walnuts ,coarsely ground
1/2 cup sugar
2 tsp cinnamon
8 sheets filo pastry
1/2 cup melted butter
Cake
5 pkg (250 gm each) cream cheese,room temperature
1 1/2 cups sugar
1/4 cup honey
4 tbs cornstarch
pinch of salt
zest of 1 orange
1 tbs orange blossom water
1 tbs rosewater
5 eggs
3 egg yolks
1/2 cup whipping cream
3/4 cup walnuts,coarsely chopped
1 tsp cinnamon
4 tbs sugar
1/4 cup rose syrup
1/4 cup pistachio's,coarsely chopped

6 sheets of filo pastry to decorate

preparations

  • Combine the sugar,walnuts and cinnamon in a small bowl.set a side
  • Brush one sheet of filo pastry with melted butter and lay on the bottom of a 20 cm spring form pan,going up the sides and hanging over the sides.
  • Sprinkle some of the nut mixture on the pastry.keep layering the pastry with excess hanging over the sides and the nut mixture until all of the pastry dough is used.
  • Preheat oven:200c.
  • In a large bowl beat the cream cheese,sugar,honey,corn starch,salt,orange zest,rosewater,orange blossom water and 2 eggs until creamy.
  • Add the rest of the eggs and yolks one at a time.Beat in the whipping cream while on the lowest speed.
  • Pour half of the batter in to the prepared pan.sprinkle the walnut mixture and ladle in the rest of the batter.
  • Bring the overhanging filo pastry to the edges and fold over to sit on the surface.
  • Take the remaining filo sheets one at a time,brush with melted butter,crumple them up gently and place them on top of the cake but leaving the center exposed.
  • place the cake pan on cookie sheet and place in the preheated oven.
  • Bake for 20 minutes.
  • Lower the oven temperature to 170 c .
  • Bake for an additional 1 hour and 15 minutes until it's set and not wet and shiny in the center
  • If the filo is browning too much,tent it lightly with a sheet of foil.turn off the oven and leave the cheese cake for 30 minutes to coll slowly..
  • Remove and allow to cool for several hours before serving.
  • loosen from the sides of the pan and place on a serving platter.
  • Garnish with chopped pistachio's and a drizzle of rose syrup.


Steamed Rice Cake With Cheese


It is a dessert made with baekseolgi (steamed white rice cake) which a rice dessert loved by many and cheese,which is world delicacy,not too chewy nor to soft,this steamed rice cake has a perfect texture.as its taste is mild and sweet,it is good for having at tea time.

Ingredients

  • 21 cm diameter dim sum plate
  • 1 kg non glutinous rice (10 gm fine sun dried salt)
  • 25 gm yellow cheese powder
  • 225 ml milk
  • 150 ml sugar
  • Decoration Ingredients
  • a small amount of cheese
  • little jujubes
  • little pine nuts

How To Make

  1. Add the yellow cheese powder into rice powder grinded with salt,and then shift it one time.
  2. Mix the yellow cheese powder with milk and shift it for two to three times.
  3. Quickly mix with sugar and put it into a dim sum plate where a wet hanji 9treditional Korean paper) is laid.
  4. After adding the decoration ingredients place the mixture into a heated steamer and steam it for about 25 minutes.after heating,leave it for another 5 minutes and turn it upside down after taking it hot and serve.

Cooking Tip

When making steamed rice cake with cheese,use raisins or apples for a sweet and sour taste.children love it.How ever in this case raisins or apples should be completely dry to prevent the rice cake from becoming watery.
