Dishes From Turkey



Chicken Topkapi

What do you think about turkey?do you have Turkish coffee one day?yes I think everybody like to share their experience about Turkish food and specially Turkish coffee .today i am going to introduce Turkish food try this recipe and taste this tangy dishes.

Ready in: 55 min
Yields: Serves 8

Ingredients

  • 100 gms butter
  • 1/2 cup pine nuts
  • 1 no onion, finally chopped
  • 1 clove garlic, crushed
  • 1/2 cup tomatoes, chopped
  • 2 cups short -grain rice, washed
  • 1/2 cup black currents
  • 1 tsp sugar
  • 2 cups boiling water
  • 1 tsp freshly crushed black pepper
  • 1 tsp all spice
  • few sprigs dill, chopped
  • 8 nos chicken thighs
  • little salt and pepper

Preparations

  1. Melt butter in a large pan and saute pine nuts until golden brown.
  2. Add garlic ,onion,tomatoes and rice .saute for 5 minutes over medium heat until all moisture has evaporated.
  3. Add black currents and season with sugar,salt and pepper and saute for another 5 minutes.
  4. Add boiling water and cook for 10 minutes or until rice is almost cooked through.stir in black pepper ,all spice and dill.
  5. Using a sharp knife ,slice open chicken thigh.Rub a pinch of salt and pepper inside each chicken piece then place a portion of rice stuffing in the gap.reserve the extra rice.
  6. Pan fry chicken until cooked through .checked if the thigh is cooked then arrange rice on plate and keep chicken on side and serve with extra rice and grilled bell peppers.
