Scallops are very easy to prepare and have a meaty texture
and sweet succulent flavor that is irresistible .here they are combined with
crunchy walnuts, creamy avocados, fine beans and a tart lemon and mustard
dressing in a salad that is perfect for relaxed summer meals with friends. This
is the ideal dish for giving your guests an extra special treat.
Serves 4
Ingredients
4 tbs walnut oil
4 tbs sunflower oil
500 gm cleaned scallops
100 gm French beans, trimmed and cut into 2.5 pieces
2 avocados
75 gm walnut pieces juice of 1 small lemon
1 tsp wholegrain honey mustard
Salt and black pepper to salt
100 gm mixed salad leaves
Method
- 1. Heat walnut and sunflower oils in a large frying pan and add the scallops and beans. Stir fry over a high heat for five minutes until the scallops browned but remain soft and juicy in the middle .meanwhile remove peel and stones and coarsely chopped the avocados.
- 2. Add the chopped avocados and the walnuts to the pan. Continue to cook for 2 minutes, stirring frequently. Remove the pan from the heat and stir in the lemon juice and whole grain mustard. Season to taste with salt and black pepper.
- 3. Divide the mixed salad leaves between 4 plates and arrange the scallop mixture on top.serve immediately.
