WARM SCALLOP AND AVOCADO SALAD

Scallops are very easy to prepare and have a meaty texture and sweet succulent flavor that is irresistible .here they are combined with crunchy walnuts, creamy avocados, fine beans and a tart lemon and mustard dressing in a salad that is perfect for relaxed summer meals with friends. This is the ideal dish for giving your guests an extra special treat.
Serves 4

Ingredients

4 tbs walnut oil
4 tbs sunflower oil
500 gm cleaned scallops
100 gm French beans, trimmed and cut into 2.5 pieces
2 avocados
75 gm walnut pieces juice of 1 small lemon 
1 tsp wholegrain honey mustard
Salt and black pepper to salt
100 gm mixed salad leaves

Method
  1. 1.        Heat walnut and sunflower oils in a large frying pan and add the scallops and beans. Stir fry over a high heat for five minutes until the scallops browned but remain soft and juicy in the middle .meanwhile remove peel and stones and coarsely chopped the avocados.
  2. 2.       Add the chopped avocados and the walnuts to the pan. Continue to cook for 2 minutes, stirring frequently. Remove the pan from the heat and stir in the lemon juice and whole grain mustard. Season to taste with salt and black pepper.
  3. 3.        Divide the mixed salad leaves between 4 plates and arrange the scallop mixture on top.serve immediately.
