KIWI FRUIT AND GRAPE CHEESE CAKE



Serves 6

225 gm plain flour
Pinch of salt
100 gm margarine or butter, diced
3-4 tbs milk

For the filling

175 gm curd cheese
75 gm caster sugar
2 tsp corn flour
3 eggs
Few drops of vanilla essence
300 ml double cream

To decorate

3 nos kiwi fruits
(Peeled and sliced)
Black grapes, halved and seeded

Method
1.      1.  /shift the flour and salt into a bowl, then rub in the fat .sprinkle over the milk and mix to dough.
2.      2./ /roll out the pastry on a lightly floured surface and use to line 23 cm /9 in flan dish. Trim the pastry edges 5 mm/1/4 in above the top of the dish to allow for shrinkage .crimp the pastry tin
3.      3./ /prick the sides and and base of the pastry well with a fork .line the base with a double sheet of absorbent paper. And microwave at 100% (high) for 3 minutes. Turning a ¼ turn every minute. Remove paper and microwave at 100 %( high) for 1-2 minutes or until cooked.
4.      4./ /beat the cheese, sugar and corn flour together.mix in the eggs, vanilla and cream. Microwave at 100% high for 4-5 minutes, or until thickened, blending with a wire whisk every minute. Does not over cook or the mixture will separate. if necessary reduce power to 50% (medium)after 3 minutes ,for greater control.

5.     5./  /pour the cheese filling into the pastry case. Draw a palette knife back and fourth over the surface. Chill for at least 2 hours. Decorate with kiwi fruit slices and grapes just before serving.
