STUFFED PLAICE ROLLS



Plaice fillets are a good choice for families because they are economical, easy to cook and and free of bones. If you prefer, the skin can be removed first.
Ingredients


Serves 4

1 medium courgette, grated
2 medium carrots, grated
 60 ml fresh whole meal breadcrumbs
15 ml lime of lemon juice
4 plaice fillets
Salt and black pepper

Method

1.       /preheat the oven to 200c/400f/gas6.mix together the carrots and courgettes,stir in the breadcrumbs, lime juice and seasoning
2.       /lay the fish fillets skin side up and divide the stuffing between them, spreading it evenly.
3.       /roll up to enclose the stuffing and place in an ovenproof dish. Cover and bake for about 30 minutes or until the fish flakes easily. Serve hot with new potatoes.
Cook’s tip

This recipe creates its own delicious juices, but for an extra sauce ,stir chopped fresh parsley into a little low fat fromage fraise and serve with the fish.
