SPICY VEGETABLES



ingredients 
1 tbs oil
50 gm margarine or butter
2 clove garlic, crushed
1 tbs ground coriander
2 tsp ground cumin
3 tbs hot vegetable stock
275 gm broad beans
350 gm leeks sliced
225 gm broccoli cut even sized florets
1 large red pepper, deseeded and cut into thin strips
Pepper
1 tsp lemon juice

 Method
1.      1./ Put the oil, fat, garlic, coriander and cumin into a 1.7 L casserole. Cover with a lid and microwave at 100% (high) for 2 minutes. Stirring after 1 minute.
2.       2./Stir in the stock, add the broad beans, leeks and broccoli, re-cover and microwave at 100% high for 5 minutes. Stir in the red pepper,re-cover and microwave at 100% for a further 4-5 minutes, or until the vegetables are tender but still crisp. Stir after 3 minutes
3./Season with pepper and stir in the lemon juice .serve immediately
